The Crémant d'Alsace is a classic method where the refermentation in the bottle is done by adding fresh Auxerrois must to the base wine that has completed aging in cement tanks for about 11 months; neither “liqueur de tirage” (syrup and selected yeasts) nor, although disgorged, “liqueur d’expedition” is added, in fact the wine is an extra brut.
