The Paleo Bianco by Le Macchiole was born for the first time in 1991, with a small production intended for the consumption of the surrounding restaurants in the Bolgheri area, where the winery is located. Since then, the success of this label has grown, and today it is an established and appreciated product, a blend where Chardonnay and Sauvignon contribute to forge a mediterranean soul both on the nose and in the mouth, where the sip becomes savory, intense, and fresh.
This Paleo Bianco is born from the union of two international white grape varieties, Sauvignon and Chardonnay. The vines of these varieties grow using the guyot system, without the use of chemical products, but following organic farming practices; they are monitored with great attention by the team at Le Macchiole winery, supervised by the important oenologist Luca d’Attoma, who knows the terroir of Tuscany like the back of his hand. The grapes, harvested during the harvest, which begins in the third week of August, once harvested ferment alcoholically in barriques for 10 days. The aging lasts for 7 months, and it takes place in barriques, new at 30% and second, third, and fourth passage for the remaining 70%. At the end of this phase, the wine is ready to be bottled and marketed.
The Paleo Bianco wine develops in the glass with a typically straw-yellow color. The aromas that shape the olfactory profile of this label move on notes of yellow-fleshed fruit, enriched by touches of aromatic herbs and hints of citrus. On the palate, it is medium-bodied, balanced, with a sip characterized by a fresh and mineral taste. A product with which the Le Macchiole winery gathers acclaim from the main industry guides, both Italian and foreign, with very interesting scores.
